En cuisine, quand on utilise les mots de : filets, mulets, faux-filets, côtes, araignées et entre-côtes pour préparer du poisson ou des fruits-de-mer, ne serait-ce pas plus ad-hoc de parler en termes de "viande de ports" ou d'un genre de "plats-de-côtes" ?
